Tomato soup


Easy to prepare, very healthy soup…

Ingredients (8 servings):

  • 2 tbs olive oil
  • 1 tbs butter (unsalted)
  • 1 large onion (finely chopped)
  • 1 large clove garlic (peeled and crushed)
  • 2 tbs all-purpose flour
  • 3 cups chicken broth (lower-salted)
  • 28-oz can whole peeled plum tomatoes, puréed, including tomato juice
  • 1-1/2 tsp sugar
  • 1 sprig fresh celery
  • salt and freshly ground black pepper


Heat oil and butter over medium-low heat until butter melts.
Add onion and garlic and cook for about eight minutes, stirring occasionally.
Add flour and stir to coat onion and garlic.
Add broth, tomatoes, sugar, celery, and 1/4 tsp of both salt and pepper.
Bring to a simmer over medium-high heat while stirring the mixture (to make sure that the flour is not sticking to the bottom of the pan).
Reduce the heat to low, cover, and simmer for half an hour.
Remove celery sprig.
Blend soup with a hand-blender or in a food procesor.
Season to taste with salt and freshly grounded black pepper.
Serve warm, with croutons and with grated parmesan cheese sprinkled on.
